Scrambled tofuBONE-BUILDING SCRAMBLED TOFU (Serves  4-5)

Dairy-free, supports healthy bones. Source of complete vegetarian protein to balance hormones and cholesterol levels. Turmeric recipes have been shown to be anti-inflammatory and may protect healthy cells from damage.

1 pound firm tofu
1 teaspoon turmeric
1 tablespoon olive oil
1/2 cup chopped red onion
1/2 cup sliced button mushrooms
1/4 cup chopped fresh tarragon
1/2 teaspoon sea salt
1/2 teaspoon black pepper

Drain the tofu well and crumble into a medium-sized mixing bowl.
Add the turmeric and stir until well-blended.
Heat the oil in a pan and gently fry the onion and mushrooms until the onion is translucent.
Stir in the tarragon, salt and black pepper.
Add the tofu to the pan and cook for 3-5 minutes, stirring as needed.
Serve hot with a slice of toasted pumpernickel, rye or wholemeal bread, per person.
